Kathi rolls/Paneer Kathi Rolls/North Vs south Challenge

For this month on north vs south challenge minne challenged south team members with her kathi rolls .When i saw that challenge  i was tempted to try it .First of all its savoury then its a  paneer kathi rolls .So i was waiting to try it.I made it for a special occasion on my hus birthday.
 This looks a bit of work but you can finish everything in an hour and half including the chapathis, not tough for a first timer like me making kathi rolls .Getting together all the ingredients is a bit of task .So gather the ingredients together then you can finish in no time .Thanks minni for the wonderful challenge and we enjoyed it a lot .

I didnt add black salt and sugar to salad even then it tasted awesome .I used homemade paneer which i made previous day and stored in refrigerator .For how to make the dough for kathi rolls check the posting here



Total time:1 and half hour
Serves:3



For marinating the paneer:

  • 100 gram paneer
  • 1 tsp besan/Kadala mavu/Besan
  • 2 tsp curd/yogurt
  • 1/4 tsp chili powder
  • 1 tsp corinder powder
  • 1 tsp cumin powder
  • 1/2 tsp black pepper powder

Kuchumber/Salad /Veggies in lemon:

  • 1 tomato
  • 1 small onion
  • 1/2 cucumber 
  • 1 small carrot
  • 1/2 lemon squeezed(around 2 tbsp )
  • salt to taste
  • corinader leaves for garnish
To roast and grind:
  • 2 cloves/krambu
  • 2 inch cinnamon/pattai
  • 1 cardamom/elakai/elachi
  • 1 red chili /sevapu milagai
  • 1 tsp corinader seeds
  • 1 tsp cumin seeds

.For Paneermasala:

  • Marinated paneer(step 1)
  • 1 small bell pepper
  • 1 small onion
  • 1 small tomato 
  • 1 tsp kasoori methi
  • Roasted spice mix(step 3)
  • Salt to taste
  • 1 tbsp oil 
For roti/chapathi :
  • 2 cups wheat flour
  • 1 3/4 cup water 
  • Chopped Coriander leaves
  • salt to taste


Method:
Step 1:

  • Make the chapathi dough and keep it aside


Step 2 :

  • Wash the paneer and cut them in cubes .
  • Add the spices(corinader,chili ,cumin ,pepper powder) and yogurt/curd and besan to the paneer cubes
  • Mix them well and marinate it for sometime.


Step 3 :

  • Cut Tomatoes,onion ,cucumber ,carrot in to thin slices
  • Add lemon juice ,salt to the veggies 
  • Add chopped coriander leaves and  keep it aside.




Step 4 :

  • Cut the bell pepper,onion,tomatoes in to cubes .
  • Heat the tava/kadai and add oil to it .
  • Add the roasted and grind masala powder (cloves,cinnamon,cardamom,coriander seeds,red chili,cumin powder)

  • Add the cubed bell pepper and saute it for a minute.

  • Add the marinated paneer cubes and saute it for like 5 minutes .

  • Add the cubed tomatoes and onion and cook it until onion is translcuent and tomatoes are cooked thorough .

  • Finally add the kasuri methi and salt and saute it for a minute and switch off the flame.


Step 5:

  • Roll the chappathis and keep the coriander leaves inside and fold them .

  • Roll them again with some flour dusting .

  • Keep the tava and when its hot put the chapathis in the pan.
  • Turn it when the color changes .
  • Flip them again when it bubbles.

  • Add oil to both the sides and take it out when both sides are done .

Step 6 :assembly

  • Keep the rotis in a flat surface
  • Add kuchumber/salad to it
  • Add the paneer masala to it .
  • Roll them with a tissue or foil or butter paper .
  • Serve them immediately .


Serving suggestions:

  • You can Prepare everything the day before and serve for your morning breakfast by heating the rotis in tava and reheating the paneer masala again .
  • After you assemble it will become soggy so serve them immediate .
  • If you are keeping it for a tiffin box place them seperately and assemble them while you eat .
